White wine is made from the pulp on the inside of the grape, and can therefore be made from grape varieties with coloured skins, as well as those with white skins. Indeed, common white wine grapes like Pinot Grigio/Pinot Gris and Gewürztraminer have pinkish skins when ripe, whilst the red Pinot Noir can be used to create white Champagne. The key for winemakers, therefore, is to minimise the amount of time that the juice spends in contact with the skins of the grape.
